Maxim, the owner of the castle, got his name derived from the Latin Maximus, meaning the greatest.
IN WINE IS TRUTH
In English, maxim stands for a pithy statement expressing a general truth or rule of conduct. Our ancestors dedicated a special role to wine and sang praises for it. In Vinica Winery we continue to raise awareness of wine culture.

Blend of pinot noir vintages 2007 – 2012 from selected vineyards.
Exclusively handpicked grapes.
Soft, rounded tannins of extremely elegant and full body.
Emphasized flavors of dark berries, sour cherry and fine smoky notes.
Fermented and aged in french oak barrels for 12 months.
The older, the better
Pinot Noir is often noted for its natural ability to be lighter than other red wines and have low tannin, but we chose to ferment our wine with whole grape clusters to increase tannin. This technique is rarely practiced on wine varieties other than Pinot Noir. The tannin added a longer runway of life for the wine to age for at least 10 years.

Great Wines Start in the Vineyard
Wine production is a typical slovenian industry, that through centuries developed three main regions of Wine production. Our vineyard is located in White Carniola, which is part of south-eastern region Posavje.
The vineyard is spreading along slopes in terraced rows in a Guyot style of vine training. The harvesting is manual in order to provide the highest quality of wine production.
Pinot noir grapes are grown in the cooler climate, and for this reason sub-Mediterranean Bela Krajina with the average temperature of about 10° C and rainfall of up to 1300 mm is a perfect location.
Our team has joined with the vision to provide our guests with a unique wine experience that joins local spirit with international. Vinica has a great historical meaning for wine growing as well as the distribution of wine. We are inspired by that and want to continue this tradition.
